Fake Truffles

These 'truffles' are really balls of energy and fibre, disguised as chocolaty goodies. They are definitely the best thing that has come out of my kitchen in a long time - in regards to taste, a healthy treat and the ease of making! They are truly DELICIOUS.



As I'm currently on a gluten free diet I made them gluten free by using gluten free oats, although I'm sure they are just as good with regulate Oats ♥

Such a simple recipe, with a great and nutritious outcome!!

What you Need:
For the Truffles
120g dates
100g oats
80g sultanas/raisins
60g sunflower seeds
5 tbsp orange juice
1 tsp vanilla essence
1 tsp honey
2 tbsp cocoa powder

For Coating
desiccated coconut

Method
In a food processor, blitz the dates, oats, sultanas, sunflower seeds, orange juice, vanilla, honey and cocoa.
Stop the processor at intervals to scrape down the sides of the bowl, to ensure the ingredients are well blitzed and evenly mixed.
A thick mixture should be formed, sticky but NOT runny.
Take approximately 1 teaspoon of the mixture and roll into balls in the palms of your hand (this can get REALLY messy... but is so worth it).
Once the mixture has been rolled into balls, coat in the desiccated coconut. Place a sheet of baking parchment on the work surface, and roll the balls in the coconut (as above).
