Almond Butter

Almond butter is so often praised on healthy eating blogs and in recipe books, but to buy, a small jar will leave your pocket about four euro lighter. To me that's an insane amount to spend, especially when it's so easy to make! I actually think this one is a lot nicer than the shop bought version, much more flavoursome. A small bag of almonds costs less than two euro in Lidl. Thank goodness for the Belbake range!



What you need:
200g almonds
a pinch of salt


Method:

Place the almonds on a baking sheet and toast in the oven at 200*C for 10 minutes.
Remove from oven and allow them to cool slightly.
Place in a food processor with a pinch of salt and put them on full power.
The almonds are first reduced to a fine powder, which then begins to stick together as the oil from the almonds is released. 
After about 15 minutes the almonds resemble nut butter consistency.
Place in a clean and airtight container/jar, and store in the fridge for up to a week.



If you are a little unsure of what to do with almond butter.. 

  • try adding a spoonful into porridge with some fruit.
  • top wheaten bread with almond butter and a little jam
  • try almond butter and a banana on toast
  • try adding almond butter to a chicken and vegetable stir fry (Recipe coming soon!)
