Carrot Cake Mini Muffins

There is actually nothing better than homegrown carrots straight from the garden! Not only are they so photogenic and vibrantly coloured (once they are washed of course), they are also so fresh and nutritious! These beauties are straight from the garden, and a little wonky from stony soil, but still way tastier than shop bought! I thought I'd whip up a batch of Carrot Cake Muffins, but with a slight healthy twist. The are really filling so would be great for a snack and would satisfy a sweet craving! 

They are even more indulgent and delicious with the cream frosting.




Ingredients:
150g wholemeal flour
1 tsp baking soda
1 tsp cinnamon
1/4 tsp nutmeg
1/4 salt
3 medium carrots shredded (approx 150g)
3tbsp honey
2 tbsp olive oil
1 egg
1 tsp vanilla extract
120ml milk (dairy, soya, almond- whatever your preference)
1 tbsp dessicated coconut

Method:
1. Preheat the oven to 180'C & line a muffin tray with silicone cases. I use these as it saves having to grease the tray. If you don't have any, you can grease the tray by using a Frylite low calorie spray.
2. Mix the flour, baking soda, cinnamon, nutmeg and salt in a bowl and set to the side.
3. In a separate bowl, add the carrots, honey, olive oil, the beaten egg, vanilla essence, and milk.
4. Make a well in the bowl of the dry ingredients and then slowly add the wet ingredients to the dry. Stir well to combine.
5. Add the dessicated coconut or coconut flakes and mix.
6. Divide between 12 muffin cases.
Bake for 15 minutes until golden brown. Check they have cooked using a skewer & remove from the oven when the skewer comes out clean.
7. Cool in the tray for 10 minutes and then remove from both the tray and the silicone cases, before transferring onto a wire rack to cool.

Serve plain or with Cream Cheese Frosting. (see recipe below)



Cream Cheese Frosting.

Ingredients:
3 tbsp Low Fat Cream Cheese
1 (heaped) tbsp icing sugar
1 tbsp orange juice

Combine all 3 ingredients and mix until a smooth consistency is reached.
Spread on top of the muffins for a more indulgent treat.
