Chocolate & Raspberry Nibbles

These little shards of deliciousness are hands down my favourite go-to recipe when I'm wanting to satisfy a sweet craving without the guilt. They are super easy to make and actually very adaptable. The raspberries are a burst of fresh sweetness to a more deep tasting, almost bitter chocolate.



What you need:
1/2 cup coconut oil
1/2 cup cocoa powder (I recommend dark cocoa powder)
2 tbsp honey
2 tbsp Jumbo Oats
1/4 cup frozen raspberries broken up slightly into their segments




Method:
Line a baking sheet with clingfilm, secure in place with sellotape if desired.
Heat a saucepan of water on medium heat on the hob, with a bowl sitting on top.
Melt the coconut oil in the bowl & add the honey, while whisking.
Sieve in the cocoa powder gradually, stirring with the whisk until the mixture is smooth and well combined.
Taste to check the sweetness, if you find it too bitter, add more honey (I find 2 tbsp to be sufficient).
Pour the chocolate onto your lined tray. The smaller the tray the thicker the chocolate will be. 
Place in the freezer until hardened, usually 15 minutes.
Break into pieces and place in an airtight lunchbox in the freezer, to prevent freezer burn.
Enjoy with a cup of tea or coffee!!
